One contained beef and pasta, the other chicken and rice. It was dinnertime and they were hungry. Conducting the Bush Wok cooking class, outback educator Roy Price strolled around the small group of participants. The tall man with a quiet and gentle nature is a passionate nutritionist. The Drug and Alcohol Services Association recently contracted Roy to conduct a series of cooking classes and tonight the enthusiastic clients at Aranda House have learned a great deal. The local dietitian developed a love of healthy eating from an early age, and, back in 2007, the Australian Dietitians Association presented him with an award for innovation. A simple 10-kilo flour drum, modified with an angle grinder, became an effective stove for supporting a wok. I wanted to use the award productively, says Roy. Since then, Ive been running these cooking events, predominantly in remote Aboriginal communities. My Bush Wok Cooking Parties are designed to promote healthy cooking and healthy nutrition. I witness the preparation turn into a team effort, thanks to Roys gentle words of encouragement, and cooking a simple meal becomes both entertaining and educational. There are lot of gaps in the system, he explains. Im aiming to make healthy cooking desirable. I show them how we can make good food tasty and attractive. Theres a reward in eating the proceeds and if you can then involve the whole family, as I do in remote communities, theres a community reward. Theres an afterglow, he adds. It is a positive activity. If its done often enough and people gain confidence in their ability to do this on a regular basis, well then it may, hopefully, become a habit. Thats when people begin to enjoy good health.
