October 10th 2012 Page 7 This delicious recipe comes care of Jamie Olivers cook book, Jamie Does. Ingredients: 1 tomato 200gr cherry tomatoes 1 roma tomato 1 medium red onion, peeled 1 cucumber 1 green pepper Handful of fresh dill Handful of fresh mint leaves Method: 1. Place all of the following into a large salad bowl: 2. Cut the cherry tomatoes in halves, the regular tomatoes into slices and roma tomatoes into wedges. 3. Slice the onion very finely so its wafer thin. 4. Scratch a fork down the sides of the cucumber so it leaves deep grooves in the skin and cut into thick slices. 5. Deseed the pepper (capsicum) and slice into rings. 6. Roughly chop the dill and most of the mint, leaving some to garnish and squeeze the olives over the salad before throwing them in to season it. 7. Add a pinch of salt, the vinegar and extra virgin olive oil. Toss everything together with clean hands. 8. To serve pop the block of fetta right on top of the salad and sprinkle the salad with oregano and left over mint. Enjoy!
